  • 8 slices fresh white sandwich bread (very soft, crusts removed)

  • 1 medium English cucumber (or 2 small regular cucumbers)

  • 4 tablespoons unsalted butter (softened) or cream cheese (softened)

  • 1/4 teaspoon fine sea salt (for the cucumbers)

  • Optional: Pinch of black pepper and 1 tablespoon finely chopped fresh dill or chives

Step-by-Step Instructions

Step 1: Prepare the Cucumbers

  1. Wash and thinly slice the cucumber (using a mandoline or sharp knife for uniform thinness).

  2. Place the cucumber slices on a double layer of paper towels.

  3. Lightly sprinkle with sea salt and let them sit for 10–15 minutes. This step draws out excess moisture so your sandwiches don’t become soggy.

  4. Gently pat the top of the cucumbers dry with another paper towel.

Step 2: Prepare the Spread

  1. In a small bowl, combine your softened butter or cream cheese with the optional fresh dill (or chives) and a pinch of black pepper. Mix until smooth and spreadable.

Step 3: Assemble the Sandwiches

  1. Spread a thin, even layer of the butter/cream cheese mixture onto one side of all 8 bread slices. (Tip: The spread acts as a moisture barrier to keep the bread soft and fluffy).

  2. Arrange a layer of dried cucumber slices across 4 of the bread slices, overlapping them slightly for full coverage.

  3. Top each with the remaining slices of bread, spread-side down.

Step 4: Slice and Serve

  1. Using a sharp serrated knife, gently trim off the crusts if you haven’t already done so.

  2. Cut each sandwich diagonally into triangles or into small rectangular fingers.

  3. Serve immediately alongside your favorite hot tea or chilled iced tea.
